Breakfast Burritos!

My daughter is so not a morning person…she speaks in mostly grunts until about 9am and do not make eye contact..she may bite. 

So our morning routine is mostly me telling her to get up, get frustrated, warn her I’m about to lose my temper and yell, then me yelling. She cries, I physically put her on the toilet….you see how it goes. 

So breakfast for her is eaten in the car every school day. 

Her favorite on the go breakfast is McDonalds…and her favorite thing from there is a breakfast burrito!  So to save me some drive thru time I whipped up these burritos!

Breakfast Burritos


1 lb ground breakfast sausage

1 lb bacon

1 onion diced

1 red bell pepper chopped

4 cups shredded cheese

24 eggs

1/4 cup half and half

Hot sauce

To Build Burritos 

Tortillas

Salsa

Shredded cheese

Start by browning the sausage. I would do it in a large sauce pan because you’re going to use this one pan to cook everything. 

Once it’s cooked set it in a bowl with a paper towel in it to drain the grease. 

In the same pan cook your bacon 


Once the bacon is cooked take it out and put it with your sausage. 

Put your onion and pepper into that bacon/sausage grease and cook about five minutes, until they’re translucent. 

Crack your 24 eggs and add the half and half, salt, and some pepper. 

Whisk them until its smooth 


Pour the egg mixture in with the pepper and onion

Constantly push the eggs around, you will see them start to cook but it will take awhile!


Add the sausage and bacon as the eggs start to cook


Add the cheese one cup at a time with the heat on low. Four cups might seem like a lot…but when I re-heat the mixture I throw some more cheese in so having that extra cheese around isn’t a bad thing!


I divided the mixture in half and put hot sauce in one for Richard and left the other plain for the kids and I. 

I divided the filling up into six sandwich sized freezer bags. In the morning I dump one in a sauce pan or the microwave and I have enough for two or three Burritos!

I warm up the shells in the microwave, put some salsa down, add the eggs, and top with more cheese! 


I love the protein, the portableness (yes that’s a word😜) and that my daughter scarfed it down!

  2. In the country where I was born (Italy) and where I’m living (France) breakfast is generally only sweet things (bread & jam, sponge cake, homemade cookies, croissants etc) so this is totally new to me. I might attempt similar things during brunch time on a lazy Sunday though….

  3. I love making breakfast burritos in advance! I am not a morning person at all, but burritos are perfect for making all of the ingredients and then putting them together in the morning in a nice, warm tortilla!
