For my final copy cat recipe of the week we are going to head to Italy! At least that’s what the Olive Garden commercials tell me.
If I am out and about in the bigger city near us I always want to stop at The Olive Garden for a bowl of Minestrone, but I have not been able to find a copy cat recipe of Minestrone that even comes close! If you have one help a sister out!
My husbands favorite however, the Zuppa, was an easy find! It’s so hearty and really easy to toss together, and tastes so good even without those delcious Olive garden breadsticks to go with it!
Copy Cat Zuppa Tuscana
1 pound Italian sausage
3 large russet baking potatoes sliced in half and then in 1/4 inch slices
1 large chopped onion
1/2 (or more) can. Oscar Meyer Real Bacon Bits (or real bacon if you prefer)
2 cloves garlic, minced
2 cups chopped kale
2 14.5 ounce cans chicken broth
1 quart water
1 cup heavy whipping cream
Brown the sausage and drain
Put the onions, chicken broth, water, and garlic in a large pot (I used a slow cooker)
Bring this to a boil if you are not using a slow cooker, then add the sausage, cream, and kale, let cook for twenty more minutes, and you’re good to go!
If you are using a slow cook just put all the ingredients in the slow cook, cook on low for 8 hours, make sure potatoes are soft!
