Baked Chicken Tacos

Am I the only person who spent Sunday in a sleep deprived haze?  I mean I am usually pretty exhausted all the time, but yesterday I couldn’t even stay away to wash the dishes after dinner! I did manage to pull myself out of bed for a Lularoe party though…priorities…

So I’d really like to have some great story telling today about something taco related…but man it’s taking all I have to get this written!

This week we are taking on some new ideas for Taco Tuesday!  This recipe is so easy and so good, I think baking baking the shells is really what makes the difference.  The tacos turn into a perfect, gooey, cheesy delight.

Ingredients

Stand and Stuff taco shells

refried beans

1.5 pounds of cooked and shredded chicken

2 cups mexican cheese

1 can tomatoes and green chiles

1 packet of taco seasoning

Pre heat oven to 350 degrees

Combine cooked chicken and taco seasoning in a pan with 1/3 cup of water

Cook on low heat until chicken is coated

Add canned tomatoes and chiles

Spray a 9×13 baking dish with non-stick spray

Coat the bottom of the taco shells with refried beans

Set them in the baking dish

Fill with the chicken mixture

Cover them in cheese!  So much cheese!  No such thing as too much cheese!

Bake for 20-25 minutes

The shells are still a little bit crunchy but also soft…I can’t tell you how good these are!

I don’t even like hard shells but I love these tacos!  fast, easy, enough for a crowd if you need…what’s not to love about this kind of Taco Tuesday?

  2. Chicken tacos are a great alternative to beef tacos. These sound amazing! Love that you bake them. Gives the shells an extra crunch!

  4. Hmm interesting idea! I’m vegan but this looks like something that wouldn’t be too hard to veganize and still keep the yummy!

  5. Your post is making me hungry! I keep meaning to make tacos for my kids but haven’t got round to it. I used to see the shells for sale everywhere when I lived in the US but not so much in the UK. Right, this week it will be Taco Tuesday in our house too!
