Tortilla Tuesday!

Hey everyone!  Here we are mid way through the week and I’m still talking about Tuesday!  And I will be all week!  

This Tuesday we took a day trip since our kids are on spring break. We went to a near by big city and had some spontaneous fun!

We did some glow in the dark golfing….

Had a cheap lunch with a fun view….

And then played some arcade games!

But when we got home we still had to have some dinner!  So the night before I put together this Chicken Tortilla Casserole and threw it in the oven as soon as we got home!

Chicken Tortilla Casserole

Ingredients 

2 lbs chicken

1 can green chiles

1 onion finely diced

Chicken gravy (recipe included)

1 clove garlic

1 cup sour cream

1/2 tsp cumin

1/2 tsp salt

1/4 tsp pepper

3 cups of cheese

12 flour tortillas

Gravy ingredients

6 tbs butter

6 tbs flour

1 cup chicken stock

1 cup of milk

Start by boiling the chicken for about thirty minutes. Remove from heat and set aside. 

Make the gravy by putting the butter into a small sauce pan and melting it. 

Add the flour and whisk

Add the milk and chicken stock from your boiled chicken and whisk until smooth

Bring to a boil and remove from heat. 

In a large sauce pan combine 2 1/2 cups of chicken stock (again from your boiled chicken) chiles, chicken gravy, onion, garlic, sour cream, cumin, salt and pepper 

Bring to a boil stirring constantly 

Spray a baking dish with non stick spray 

Cover the bottom of the dish with the sauce

Add a layer of tortillas

Then a layer of chicken and cheese

Repeat this until there are three layers of each. End with cheese 

I covered the dish in aluminum foil and left it in the fridge over night. 

When you’re ready to cook put it into a 350 degree oven for 25 minutes still covered, then 15 minutes uncovered 

This could be a great freezer meal too!
