Perfect Strawberry Pie

Spring is here!  Finally!  I am ready to plant some gardens, play outside, smell the fresh cut grass…all of it!

We are still on spring break and going on adventures here and there. 


On Friday we went to the library, maybe not the most glamorous trip but a great memory of Dad coming with us and entering the coloring contest. 


We got some movies and some books, and my thirty year old husband entered his leprechaun into the coloring contest. 


I told him he definitely won his age group, even if they didn’t call 😉

When we got done there we went to a little diner for lunch and then headed home to some dessert!

Strawberries are everywhere right now, we all love them, so I figured a strawberry pie would be a huge hit, and it was!

Perfect Strawberry Pie

Ingredients

Pie crust

1 1/4 cup flour

1/4 tsp salt

1 stick sliced butter

6 tbs ice water

Pie Filling 

1 1/2 cup water

1 cup sugar

3 tbs cornstarch

3 oz strawberry gelatin

1 quart strawberries 

Start by making the pie crust;

Combine the flour and salt, then cut in the butter using a pastry cutter or in my case, my hands


Add the water a tablespoon at a time until the dough forms 

Form into a ball and cover with parchment paper. Refrigerator two hours or up to over night 

Gently roll out the dough and put it in the pie pan. This only makes a bottom, of you want top and bottom crust double the recipe. 


Brush with egg wash (1 egg 2 tbs milk)

Preheat oven to 350 degrees

Use a fork to put some vent holes on the crust

Cover crust with foil and pour some rice in it to weigh it down 


Bake in the oven for 20-30 minutes. Set aside and let cool completely. 

While the crust is in the oven start on the filling. 

Combine the water, cornstarch, and sugar. Over medium heat cook themnuntil they get thick


Remove from heat and add the gelatin 


Stir to combine, let cool and add the strawberries!


Pour into pie crust and chill in the fridge for an hour before serving!

  1. I’m so totally jealous. My husband is the chef of the house but he can’t bake, and I tend to over cook things when I’m baking. The two of us make up one cook in the house! lol. I love the adventures you’re doing though for Spring Break I really love seeing families do things together during that time. Now I shall try not to eat your post on the way out! 🙂

  3. Your pie looks delicious! It reminds me one that my grandmother used to make, but I never got the recipe from her. Will have to give yours a try and see if it’s similar.
