Rollin’ Down South

So have you tried any of the lasagnas?  I really enoyed making these and I know all three of them will be regularly rotated in our menu, especially with summer coming and these being so make ahead friendly.

This last lasagna I actually did make ahead, but only by about seven hours.

My kids school had skate night but my husband got offered a route with his friend, and the idea of taking the kids all three kids by myself had me exhausted before we even started the day.  Luckily my friend Desiree (the wife of Richards driving buddy/workout buddy/friend he’s known for like 12 years) offered to have us come to her house and watch some movies and hang out.  The kids could play, and we could sit around in our Lularoe and talk about all the naps we would some day take.

Since she was offering up her home I offered my cooking!  Southwest cheesy lasagna was already on my menu, so that’s what we brought!

Ingredients

10 lasagna noodles cooked

20 oz enchilada sauce

8 oz cream cheese

1 1/2 cup diced cooked chicken

15 oz black beans

2 peppers diced

2 garlic cloves

4 cups Mexican cheese

1/2 cup chopped green onion

1 taco seasoning packet

Pre heat oven to 350

Lay out the cooked noodles on a towel  SUPER IMPORTANT!!!

Put the Enchilada sauce and cream cheese into a blender and puree!

In a large bowl combine the chicken,. peppers, garlic, onions. black beans, 2 cups of cheese and taco seasoning

Spread half the enchilada sauce mixture into the bottom of a greased 9×13 baking dish

Spread the chicken mixture onto the noodles and carefully roll them up

Place them seam side down into the dish

I had left over roll up stuffing so I threw it on top of the noodles

Then I poured the remaining sauce on top, and the rest of the Mexican cheese

Bake for 25-30 minutes!

We served it with Taco rice and it was an easy meal!  Easy to take with us and easy to clean up!

  1. Can I just say thank you for posting that picture?? I’m talking about the excellent one of the kiddos eating. It makes me feel so much better to know there are other families who sometimes do dinners with toys still sprawled on the tables 🙂 Real mamas unite!
